Melodie’s Dairy Free Double Chocolate Sheet Cake
(insert big long heartfelt story about how recipe was discovered here)
For Cake:
2 sticks butter (1/2 C) – plant butter is cool
6 T cocoa
1 C water
2 C sugar
2 C flour
1/2 tsp salt
1/2 C milk – almond milk is cool
1 tsp baking soda
1 tsp vanilla
2 eggs
Heat 1st 3 ingredients together in saucepan until well blended. Remove from heat & add next 3 ingredients. Add everything else except eggs. Mix well. Add eggs & beat until smooth. Pour into greased & floured sheet cake pan. Bake at 375 for 20 min.
For Icing:
1 stick butter (1/4 C) – plant butter is cool
4 T cocoa
6 T milk – almond milk is cool
1 tsp vanilla
3 to 4 C powdered sugar
Combine butter, cocoa, & milk together in saucepan & heat to boiling. Remove from heat. Add powdered sugar & vanilla. Pour over cake.
